Responsibilities:

  • Manage day to day operations

  • Provide the best possible internal and external guest experience and continually strive to exceed the guest’s expectations

  • Responsible for hiring, training, evaluating and motivating staff to include applicable processing

  • Consistently create and implement winning menus through proper training

  • Forecast and achieve revenues and expense goals

  • Assist in ensuring that product, service and facility cleanliness is of the highest quality and consistently maintained

  • Strong commitment to both quality and quantity controls throughout the units and kitchen safety

  • Create procedures regarding food and menu consistency, i.e. recipe books, schematics, etc.

  • Develop and maintain excellent working relationships between MT. Sunapee employees, sales representatives, and all those with whom MT. Sunapee conducts business

  • Responsible for purchasing and inventory control

  • Ensure that equipment is kept updated and in good working condition.

  • Promote a fair and harmonious work environment through direction and leadership, and ensure that disciplinary action is consistent and within MT. Sunapee guidelines

  • Handle all internal concerns in a professional and timely manner

  • Schedule staff efficiently and ensure that service levels and budgetary requirements are met on a weekly basis

  • Oversee weekly food inventories in outlet(s)

  • Check e-mail, office mailbox and voicemail regularly

  • Process weekly payroll, including daily missed punch reports

  • Attend all necessary meetings as scheduled

  • Review monthly cost & labor income statements and budgets and provide managers with forecasting assistance, react as needed

  • Responsible for other duties as assigned by Culinary Services Director

  • Performs management duties i.e. interviewing and selecting employees, scheduling, planning and directing staff, has authority to hire or terminate staff or has particular input to the hiring, promoting or terminating staff on a regular basis

  • Ability to work in a fast paced environment with a strong understanding of the food service business

Physical Demands:

  • Ability to operate all culinary equipment

  • Ability to endure long periods of sitting and/or standing

  • Ability to lift 50 pounds (medium lifting)

  • Ability to access all areas of the mountain by foot, snowmobile or all-terrain vehicle

  • Ability to work on computer and phone systems for extended periods of time

Certifications/Diplomas/Prerequisites:

  • 5 years in the field, 3-5 years experience as Executive or Sous Chef in high volume food & beverage environment, preferably in a resort environment.

  • Serve safe certification
